Salted Caramel Raw Balls (No.1 Pick)


Salted Caramel Raw Balls

So you will either love me or hate me for these ones because they are seriously insanely good! Try and hide them so you don't eat them all! I store mine in a container in the back of the freezer (not that that stops me). Enjoy in moderation or one per day with your coffee or tea.

Ingredients
250g cashews
1/2 cup oats 
1/4 cup pepitas 
1 Tbsp chia seeds
7 Medjool dates 
2-3 Tbsp rice malt syrup
Big pinch of pink Himalayan salt

Method 
1. Process cashews until fine and then add in oats while turning.
2. Add pepitas and chia seeds and process again. 
3. One at a time while turning add medjool dates.
4. Then add rice malt syrup and salt. 
5. Once mixture start to stick together, roll into balls and freeze or refrigerate.

Tips: 
1. You will have to stop your food processor a couple and times and use a spoon to make sure all the mixture is getting incorporated.
2. Add salt to taste (I like mine a little extra salty).
3. If the mixture isn't sticking together add more rice malt or a tiny splash of water.

Choc Peppermint Bliss


Choc Peppermint Bliss Balls:

Ingredients: 
1 cup almonds
3/4 cup cashews
1/2 cup rolled oats
2 Tbsp cacao powder
10 medjool dates 
3 Tbsp rice malt syrup 
1/4 tsp pure peppermint essential oil 
Pinch salt 

Method:
1. Process almonds, then add cashews and oats until fine.
2. Add cacao, essential oil, and salt and process again.
3. One at a time add in dates and then rice malt at the end. (You want the mixture to stick together so a small amount of water may be needed)
4. Roll into balls and place in the freezer or fridge. 

Notes:
I got my essential oil from a health food shop. Not all essential oils can be consumed so do not try to make other flavours. Only a small amount should be added! Photo below of the one I use.

Sweet Potato Shepards Pie



Sweet Potato Shepards Pie

Ingredients:
1 large sweet potato
500g lean beef mince
1 brown onion
1 carrot 
1/2 cup peas 
1 vegetable stock cube
1Tbsp tomato sauce (no added sugar)
1Tbsp barbecue sauce (no added sugar)
Herbs and spices to taste

Method:
1. Peel, chop up and boil sweet potato till soft.
2. In a pan with a small amount of water brown mince, add diced onion and carrot and cook until onion has softened. 
3. Then add crumbled stock cube, both sauces and herbs and spices to taste. (I used Mingle all purpose seasoning)
4. Add peas at the end and mix through. 
5. Spray small ramekins with coconut oil and and fill with mince mixture then top with mashed sweet potato.
6. Place in oven on 200 degrees Celsius for 20 mins or till crisp on top.

Tips:
1. Mingle seasonings are made with all natural ingredients and don't have any unnecessary added sugars or chemical fillers. A variety can be purchased from www.mingleseasoning.com
2. The sauces I use are the brand Fountain. You find these in the supermarket in the normal sauce section but say on the label in blue "no added sugar". 
3. Make sure there is still water in the pan when you add the stock cube, if there isn't add a very small amount. 
4. I added unsweetened almond/coconut milk to my mash to create a creamier texture.
5.  This meal can be made in one big oven dish, I did mine in 4 small ramekins which I have glad wrapped and put in the fridge.

Turkish Delight Bliss Balls


Ingredients:
1/2 cup almonds
1/2 cup walnuts
1/2 cup pistachios
1/2 cup oats
1/2 cup shredded coconut
1/4 cup dried cranberries
2Tbsp rice malt syrup
11/2 tsp rose water

Rolling: Desiccated coconut or cacao powder.

Method:
1. Put all nuts in food processor and blend until fine.
2. Add coconut and oats and blend again.
3. Add cranberries, rice malt syrup and rose water. Process until mixture starts to stick together.
4. Roll into balls, then roll in chosen coating (coconut or cacao).

Tips and hints: 
- Dried cranberries without added sugar can be hard to find, so I used the brand 'Ocean Spray' with 50% less sugar. These can be found at Coles. (Photo below) 
- The mixture may be a little oily due to the almonds and walnuts combining together. 
- Roll all balls first then coat them to make the process easier and avoid getting your hands too messy. 
- All bliss balls can be kept in a container in the fridge, or if you would like them to last longer put them in the freezer!

Lemon and Coconut Bliss Balls



Recipe:

1 cup raw cashews
1/2 cup rolled oats
1/2 cup shredded coconut
1 whole lemon: zest, pulp, juice
2 Tbsp rice malt syrup
Desiccated coconut (for rolling)

Method:
1. Process cashews until fine.
2. Add oats and shredded coconut and process again.
3. Add zest, pulp and juice of lemon and mix again.
4. Finally add rice malt syrup, just enough until mixture binds nicely together.
5. Roll into small balls then roll in coconut.

Tips: Don't add all the

lemon juice until after the rice malt has been added. Depending on the size of the lemon, too much juice can make an extra sticky mixture.

Black Bean Choc Fudge Brownies


Black Bean Choc Fudge Brownies

These bad boys are gluten free, sugar free, dairy free and my gosh do they taste good!

I made double the batch because I wanted to share it with all my clients just in time for Easter, so if your after a smaller serve of around 16 brownies stick with the required amounts and bake it in a medium square cake tin.

Ingredients
  • a can of black beans, drained & rinsed
  • 2 eggs, large
  • 1/2 cup applesauce, unsweetened
  • 10 Medjool dates, pitted
  • 1 scoop of protein powder (optional)
  • 1 Tbsp rice malt syrup or honey
  • 1/2 cup cacao powder
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup dark choc chips

Method
  1. Preheat oven to 180 degrees and line a medium size square baking dish with baking paper, holding it down with some cooking spray.
  2. Put black beans in food processor and blend.
  3. Add the rest of the ingredients (except chocolate chips) to food processor and process until  really smooth, this may take time.
  4. Pour batter into lined baking dish and top with your chocolate chips. Bake for 30 minutes.
  5. Remove from the oven and let brownies cool for 5 minutes. Transfer to a cooling rack and let cool completely before slicing. Cut into 16 squares.

Major Tips*
Before you go crazy, running around searching for ingredients (like I did..) please remember these very important tips to save you time!
1. You can not buy black beans at a normal supermarket, you must go to an Asian grocer to get them. If you are lucky you will be able to buy them in a can but if you can't they will either come in a vacuum seal bag or they will be in a packet and raw. I found that a lot of the vacuum seal bags had extra ingredients like salt or soy sauce so if this is the case go for the RAW option!
2. If your black beans are raw it means you will need to soak them before you use them. This will take time so do it the day before you plan to make them. To soak: Put beans in a deep bowl, cover with boiling water and add a teaspoon of baking powder. Soak over night in the fridge (min 8 hours) covered.
3.  Unsweetened applesauce is also hard to come across in a supermarket because they always add sugar!! So instead of hunting around at health food shops or organic shops and paying a ridiculous price, just head straight to the baby section of the supermarket and buy a can of baby-food! 100% pureed apple with added Vitamin C. Perfect!

Chocolate Chip Cookies


Chocolate Chip Cookies!

This recipe is ridiculously easy to make and so so yummy! 

Some little tips:
 1. Make your cookies small so they cook through.
2. Your hands need to be wet as you roll them because the mixture is super sticky, so just run them under the tap every now and then. 
3. The chickpeas make the cookies a soft texture so don't stress when they don't come out with a crunch.

Recipe:

Ingredients
-1 can of chickpeas, rinsed and dried in paper towel
-1/2 cup natural peanut butter (or any natural nut butter)
- 1/4 cup honey
- 2 tsp vanilla essence
- 1 tsp baking powder
- pinch of salt
- 2/3 cup dark choc chips

Method
1. Blend chickpeas in food processor first and then add all other ingredients (except choc chips!) 
2.Then add in choc chips and mix in with spoon. 
3. Wet hands and roll mixture into little balls, push down on baking paper. Bake 180 degrees for 13 mins.
