Healthy Cookie Dough Balls


Healthy Cookie Dough Balls


These delicious treats turned out way better then I expected and I received lots of great feedback from everyone that tasted them! They are packed full of protein and make for the perfect snack to have with tea or coffee.


Ingredients:

1 can of chickpeas
1/3 cup almond meal
1/4 cup rolled oats
1 scoop of protein powder
2 Tbsp coconut oil (melted)
2 Tbsp honey or coconut nectar
1 tsp vanilla extract
1/2 cup dark chocolate chips
Dark cooking chocolate for rolling


Method:
1. Drain and rinse chickpeas, then pat them dry with paper towel
2. Place chickpeas in food processor and blend until smooth.
3. Add all other ingredients apart from the chocolate chips into the food processor and blend until well combined.
4. Then add you choc chips to your mixture and combine using your hands until they are all mixed through.
5. Roll into small balls and place them on a tray lined with baking paper, then put them in the freezer for an hour to firm up.
6. Melt your dark cooking chocolate on a low heat on the stove or in the microwave and then coat the cookie dough balls in the melted chocolate.

*Store in an air tight container and keep in fridge


 Enjoy and try not to eat them all at once ;)
