Raw Salted Caramel Tart



Raw Salted Caramel Tart:

This raw tart is so yummy and super easy to make! Just a couple of tips before you get started:

1. Invest in a good quality food processor! One of the best things I have done since baking clean and raw treats. It makes everything super easy, time efficient and all recipes turn out perfect! Most of my recipes on my blog will most likely need one.
2. Make sure you have some hours spare to make this tart and read over the recipe the night before so you can plan out your day in between setting times.

Ingredients:

 Base:
·         1 cup dates (pitted)
·         1/2 cup raw almonds
·         1 pinch of cinnamon
·         1 tsp coconut oil (melted)

Caramel:
·         1 cup dates (pitted)
·         Pinch of Himalayan sea salt
·         1/2 cup coconut oil (melted)
·         1 ½ T Tbsp tahini
·         1/2 cup sugar free maple syrup
·         1 cup raw cashews (soaked for 2hrs then rinsed)
·         1/4 cup water (if needed)

Chocolate Layer:
·         1/4 cup coconut oil (melted)
·         1/4 cup sugar free maple syrup
·         1/4 cup raw cacao powder (sifted)
·         1/2 tsp vanilla bean paste
·         Pinch Himalayan Sea Salt

Method

Base:
1.       Put all the Base ingredients into food processor in the order listed and secure the lid.
2.       Pulse ingredients on high speed until it turns into fine crumbs and sticks together easily.
3.       Mould the mixture into a tin lined with greaseproof paper or tart tin with removable bottom.
4.       Place in the freezer to set for 1 hour.

Caramel:
1.       Put all the caramel ingredients into the food processor in the order listed and secure the lid.
2.        Turn the machine on and increase the speed to high, process until smooth, making sure all ingredients are incorporated.
3.       If you need to, add a little bit of water.
4.       Pour the caramel mixture on top of the base and return it to the freezer for 1 hour or until set (may take a little longer).

Chocolate Layer:
1.       Add the coconut oil, maple syrup and vanilla bean paste to a bowl and gently sift the cacao powder into the mixture.
2.       Whisk until nice and smooth.
3.       Spread the chocolate sauce on top of the caramel layer
4.       Place it back in the freezer for an hour and then remove from the tin, slice and serve!

Lil's Muesli

Lil's Muesli:


So a gorgeous girl I work with Lily gave me this amazing muesli recipe that you all must try! It takes less than 20 mins to make so we all have the time.

It is so important to try and make all your food yourself! Buying pre-made or packaged food from the supermarket is something we need to try and stick away from. For example, muesli that you buy from the supermarket has way more ingredients then what we really need, a lot more added sugar for one and other preservatives.

By simply creating our own unique recipe buy using the nuts, grains and seeds we like and other natural ingredients, you can enjoy your muesli guilt free every morning!

This granola in particular goes great with a big bowl of natural Greek yoghurt and fresh raspberries. Something I myself have most mornings for breakfast :)

So here it is..



Ingredients:


1 cup Rolled Oats

½ cup Quinoa

Handful of Almonds

½ cup Shredded Coconut

1/3 cup Pepita's and Sunflower Seeds

1tsp Cinnamon

2Tbsp Coconut oil

2Tbsp Honey



Method:
1. Combine all dry ingredients in a bowl
2. Melt coconut oil and honey together in microwave or stove top and mix together
3. Pour over dry ingredients, making sure all is covered and combined
4. Spread muesli on shallow baking tray, lined with baking paper and cook at 160⁰C for 10 to 15 mins or until golden brown

5. Wait until cool before removing from tray
6. Break up and store granola in an airtight container

Healthy Cookie Dough Balls


These delicious treats turned out way better then I expected and I received lots of great feedback from everyone that tasted them! They are packed full of protein and make for the perfect snack to have with tea or coffee.


Ingredients:

1 can of chickpeas
1/3 cup almond meal
1/4 cup rolled oats
1 scoop of protein powder
2 Tbsp coconut oil (melted)
2 Tbsp honey or coconut nectar
1 tsp vanilla extract
1/2 cup dark chocolate chips
Dark cooking chocolate for rolling


Method:
1. Drain and rinse chickpeas, then pat them dry with paper towel
2. Place chickpeas in food processor and blend until smooth.
3. Add all other ingredients apart from the chocolate chips into the food processor and blend until well combined.
4. Then add you choc chips to your mixture and combine using your hands until they are all mixed through.
5. Roll into small balls and place them on a tray lined with baking paper, then put them in the freezer for an hour to firm up.
6. Melt your dark cooking chocolate on a low heat on the stove or in the microwave and then coat the cookie dough balls in the melted chocolate.

*Store in an air tight container and keep in fridge


 Enjoy and try not to eat them all at once ;)

Apricot and Coconut Balls


Apricot and Coconut balls!

This is possibly the easiest and quickest thing I have ever made. I threw a few ingredients together in a food processor and it worked out perfectly! I didn't measure any of the ingredients but it was close to equal parts of each component. 

Recipe:

200g of dried apricots
3/4 cup of almond meal
3/4 cup of coconut
1/3 cup of rolled oats
2 Tbsp of coconut nectar or natural honey

After mixing all those ingredients in a food processor for roughly 3 minutes I added a small amount of water just to help make the mixture come together. I then rolled them into balls and then in coconut :)

Makes 10 - 12

Clean Chocolate Truffles


Clean Chocolate Truffles!

Recipe:



125g walnuts
125g almonds
2 Tbsp cacao powder (or can use PURE cocoa powder)
¼ tsp cinnamon
Pinch of salt
10 fresh pitted dates
1 tsp vanilla extract or coconut nectar
And desiccated coconut for rolling.

Method:
 


1.     Place walnuts and almonds in food processor, process until ground.
2.     Add cacao, cinnamon and salt, mix until combined.
3.     Add pitted dates and vanilla extract or coconut nectar, test to see if mixture starts to come together (if it doesn’t, add a little water then process again).
4.     Roll in small bite-size balls then roll in coconut or cacao powder
5.     Store in fridge.

* Tip: To pump up your protein intake add 2 Tbsp of protein powder to the mixture, either chocolate or vanilla flavour would work nicely. I Have used a Raw vanilla protein in mine :)
