Recipe:
1 cup raw cashews
1/2 cup rolled oats
1/2 cup shredded coconut
1 whole lemon: zest, pulp, juice
2 Tbsp rice malt syrup
Desiccated coconut (for rolling)
Method:
1. Process cashews until fine.
2. Add oats and shredded coconut and process again.
3. Add zest, pulp and juice of lemon and mix again.
4. Finally add rice malt syrup, just enough until mixture binds nicely together.
5. Roll into small balls then roll in coconut.
Tips: Don't add all the
lemon juice until after the rice malt has been added. Depending on the size of the lemon, too much juice can make an extra sticky mixture.
